Stephan Schubert is the ACF Pastry Chef of the Year.
Stephan Schubert (Executive Pastry Chef, River City Casino & Hotel, St. Louis, MO) won $5000 and the title of 2014 American Culinary Federation (ACF) Pastry Chef of the Year at the ACF National Convention in Kansas City, Missouri (July 25–29, 2014). The ACF Pastry Chef of the Year award, established in 2004 and sponsored by Plugrá® European-Style Butter, recognizes a pastry chef who has displayed a passion for the craft, has an accomplished reputation in the pastry field and has given back to other dessert professionals by sharing his or her skills and knowledge. Schubert oversees the day-to-day bakery operations for a staff of more than 30 as Executive Pastry Chef at River City Casino & Hotel. He also serves as a culinary-arts adjunct teacher at St. Louis Community College, St. Louis.
“This year has been both challenging and exciting,” said Schubert. “The biggest thank you goes to my wife, Aimee Schubert, who played a big part in winning this award. I am grateful for all of the support and encouragement from the Chefs de Cuisine Association of St. Louis Inc., and the community and I could not have done it without the help and feedback from Kevin Storm, CEC, CCA, AAC, Ricky Jordan and Chris Desens, CEC, CCA, AAC.”
Competitors were allotted two and a half hours to create and serve three items: a cold contemporary plated dessert, a sugar cookie and a showpiece based on the this year’s theme, The Wizard of Oz. A panel of ACF-approved judges determined the winner.
